Egg Roast

Egg Roast is a yummy egg based dish that goes wonderfully well with rotis of all kinds and appam varieties.

Total Time           : 25  minutes

Yields                  : 3 or 4 servings

What you require:

  1. Egg           : 2
  2. Onion: 1 nos
  3. Garlic pods: 5 nos(chopped)
  4. Ginger            : 1/4 inch long(crushed)
  5. Curry Leaves – 1 strip
  6. Coriander powder – 1tsp
  7. Red chili powder – 1 tsp
  8. Turmeric powder – 2 pinch
  9. Garam Masala – 1/4 tsp
  10. Chicken Masala – 1/4 tsp
  11. Fennel Seeds – 1/2 tsp
  12. Tomato(medium) – 1 nos
  13. Mustard  seeds  – 1/4 tsp
  14. Oil – 3 tbsp
  15. Salt – As reqd
  16. Water : 1 cup
  17. Coriander leaves for garnishing

Preparation:

  1. Boil eggs,  remove shell and keep it aside.
  2. Heat oil in a pan.
  3. Splutter mustard seeds, add onions, ginger and garlic.
  4. Fry onions till it turns yellowish brown.
  5. Add tomatoes and fry it properly.
  6. Add red chili powder, turmeric powder, coriander and fennel seeds powder, Chicken Masala powder, garam masala powder and salt.
  7. Stir it well and allow it to cook for 2 minutes and add water.  Cook till it become a thick gravy.
  8. Slit the boiled eggs or make stripes with the knife and put them in the mixture add curry leaves.
  9. Cover the egg with the masala, cover the pan with a lid and let it cook for 15 mins.
  10. Remove the cover of the pan.
  11. Garnish with coriander leaves.

Ideal dishes serve with/ ideally served as part of:

Egg Roast is best served as part of Appam, Chappathi etc.
